🍅 “NONA” – Mary Ascani
In the heart of southern Italy, in a sun-soaked town called Foggia, a young girl named Mary grew up surrounded by fields of tomatoes so ripe they seemed to glow under the Apulian sun.
From the time she could reach the kitchen counter, Mary learned to stir pots in her family’s kitchen, always under the watchful eye of her mother and grandmother. But it was Mary who dared to add her own “secret touches of farm fresh Italian spices andingredients”.
Over the years, Mary perfected what she simply called il sugo rosso—a sauce that was rich, zesty, and deeply layered. Neighbors whispered about its flavor, about how it somehow tasted like love, a memory, and sunshine all in one taste. Yet no one could ever quite guess her secret.
To this day, the mystery of her sauce is part of the Graffiti New York Pizza “Magic”. Every bite carries the story of a girl from Foggia, her secret touch, and the promise that real Italian food is not just eaten—it’s felt.
Our restaurant and chefs have to give a tremendous thanks, praise and credit where it is due!
Graffiti New York Pizza has been heavily influenced by the amazing techniques and recipes of 13 TIME “World Pizza Champion” Tony Gemignani.
